Ingredients
1 onion, finely minced
1 garlic clove, finely minced
1/3 cup olive oil (less is fine)
1 cup rice (basmati OK if on hand)
1 ts salt
1 tbs mild chili powder
2 cups stock (water OK)
Preparation
Preheat oven to 350. Saute onion until just soft, add garlic & spices and brown lightly. Add stock or water and bring to a boil. Cover and bake until liquid absorbed, about 30 minutes or so.
