Ingredients
12 Large Mushrooms
lemon juice
2 T Butter
4 T grated swiss cheese
1/4 lb Crab meat
1 T minced fresh parsley
1 T minced onion
4 T dry sherry
dash of salt and black pepper
1/2 cup bread crumbs
Preparation
Wash mushrooms. Remove stems and set aside. Srpinkle each mushroom cap with lemon juice. Mince stems and saute briefly in butter. Allow stems to cool, and add swiss cheese, crab meat, parsley, onion, sherry, salt, black pepper, and 1/4 cup of bread crumbs. Stuff mixture into mushroom caps, and sprinkle with remaining 1/4 cup bread crumbs. Dot with a bit of butter and bake at 350 for 25 minutes.
