Ingredients
1 cup fat free milk
1 tbsp lemon juice
1 egg
1 cup ripe bananas, mashed
1/2 cup loose pack brown sugar
1 apple, shredded
1 cup steel cut oats
1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1/4 tsp nutmeg
1/4 tsp cinnamon
1 tsp vanilla
Preparation
Preheat oven to 400F.
Lightly oil 12 muffin tin.
In a 1-cup liquid measuring cup, add lemon juice, then add milk until it reaches the 1-cup line. Allow to sit for 3 minutes.
In a medium bowl, beat one egg. Add apple, mashed banana, steel cut oats, brown sugar, nutmeg, cinamon, vanilla, and the milk. Whisk until combined.
In a large bowl, sift together flour, baking soda, salt, and baking powder. Add wet ingredients to the dry and stir just until combined. Divide evenly between the twelve muffin cups, filling them almost to the top.
Bake for 25 minutes
