Ingredients

2 ripe bananas

2 tbsp melted butter

1 tsp cinnamon

2 cups old fashioned oatmeal

1/2 cup pecans, toasted & chopped

1/4 cup sugar or sugar substitute

1 tsp baking powder

1/4 tsp salt

1/4 cup honey

2 cups milk or water

1 egg

2 tsp vanilla

2 cups blueberries

2 tbsp brown sugar

Preparation

Preheat oven to 350. Slice bananas and layer in an 8x8 buttered baking dish. Mix melted butter & cinnamon, pour over bananas. Cover with foil and bake 10 minutes. Allow to partially cool and mash bananas. while baking bananas, mix oats, 1/4 cup nuts, baking powder & salt. In a separate bowl, whisk bananas, honey, milk, egg and vanilla. Mix oat mixture with banana mixture. Fold in 1 1/2 cup blueberries. Pour into baking dish, sprinkle remaining nuts blueberries, and brown sugar over top. Bake for 30 to 45 minutes or until set. Serve warm.
