Ingredients

3 Tbl. Butter

1 Cup flour

pinch salt

1 Tbl. sugar

1 tsp baking powder

3 large eggs

1 cup milk

1/2 tsp. vanilla

Confectioners’ sugar

1-2 Tbl. lemon juice, optional

Preparation

  1. preheat oven to 450. Add butter to 12" skillet and put in oven; butter will foam, remove.
  2. Combine dry. Beat eggs, add milk & vanilla. Whisk egg mix into flour mix, but do not overbeat. Pour into skillet.
  3. Bake 20 mins, until pancake if puffy & lightly browned. Sprinkle w/ confectioners’ sugar, add lemon juice and dried fruit if desired.
