Ingredients

4 (6-oz) boneless, skinless chicken breasts

1/2 cup pesto (from a jar)

2 oz shredded part-skim mozzarella cheese (1/2 cup)

Salt and freshly ground black pepper

Preparation

Heat oven to 375 degrees F.

Season chicken with salt and pepper. Spread 1/4 cup of the pesto in a 9- by 13-inch baking dish. Lay chicken breasts over pesto in an even layer and spread with remaining pesto.

Cover baking dish with foil and bake chicken until cooked through, 20 to 25 minutes. Uncover and top with cheese. Bake until cheese is melted, 5 more minutes. serve hot.
