Ingredients

8 Red Bell Peppers cut into thin strips

1 small jar capers (rinsed & chopped)

1 can anchovies (rinsed & chopped)

2-3 cloves chopped garlic

Olive oil

Balsamic vinegar

Salt & pepper

Preparation

Place above ingredients into roasting pan. Sprinkle w/good amount of olive oil and with balsamic vinegar Season w/salt & pepper.

Bake at 350 for approx 1 hr, stirring peppers after 1/2 hr. (You want some caramelization, so cooking time can be flexible.) When peppers are very tender, remove from oven & place in an ample bowl. Cover till cool. At this point, I use two knives & with a scissoring motion, cut up the pepper mixture. Then add enough flavored breadcrumbs to absorb most of the oil. Place in a serving bowl with the croutons around.
