Ingredients
Preheat oven to 375 F.
1 1/2 cups rice
pinch salt
3 cups water
In a heavy saucepan, combine rice, water and salt and cook until rice is done.
2 T butter
1/2 pound mushrooms
1 small onion, chopped
In a medium skillet, melt butter, then saute mushrooms and onions over moderate heat until onion is soft.
1 cup sour cream
1 cup grated Jack cheese
1 T lemon juice
2 T chopped parsley (or cilantro)
1/2 tsp thyme
1/2 tsp Tabasco
In a large mixing bowl, combine remaining ingredients. Add rice and vegetables and mix well. Turn into a greased 2 quart casserole. Smooth the top. Bake, covered, for 35 minutes.
