2 salmon fillets

4 lemons

4 shallots

150ml sweet rose wine

25g butter

2 squares of white chocolate

100ml double cream

Salt

Preparation

Method;

* Sprinkle salt and juice of 1 lemon on each salmon fillet and bake in foil 15-20 mins (180C)

* Chop the shallots and put them in a pan with the wine, bring to the boil and then simmer

* Add a pinch of salt, juice of 3 lemons and cream to the pan of onions and mix thoroughly, still simmering.

* Place i n the cold butter and white chocolate and let it melt

* Serve the sauce over the salmon
