Ingredients

1 tsp (5 mL) each ground cumin and coriander

1/2 tsp (2 mL) cinnamon

1/2 tsp (2 mL) grated lemon rind

1/4 tsp (1 mL) each salt and pepper

Pinch cayenne pepper

8 chicken drumsticks or 4 chicken breasts (2 lb/1 kg)

Preparation

In large bowl, combine cumin, coriander, cinnamon, lemon rind, salt, pepper and cayenne. Add chicken; turn to coat.

Place chicken on foil-lined rimmed baking sheet; bake in 425°F (220°C) oven until juices run clear when chicken is pierced and skin is browned and crispy, about 30 minutes.
