Ingredients

1/4 cup + 2 Tablespoons oil (canola, evoo, vegetable)

3 eggs, slightly beaten

1/2 medium onion, chopped

2 cups small curd cottage cheese (low fat or fat free)

3 Tablespoons flour

1 1/2 cups shredded cheddar cheese (low fat or fat free)

30-32 oz. frozen chopped spinach, cooked and drained (3-10 oz boxes or 2-16 oz. bags)

salt and pepper

Preparation

Preheat oven to 350 degrees

Put oil in 9x13 Pyrex dish

Add onion. Stir in flour.

Combine spinach, eggs, cottage cheese and cheddar cheese in separate bowl. Season with salt and pepper and add to onion mixture in Pyrex dish.

Stir to combine.

Bake uncovered 1 hour.
