Ingredients
25 large jalapenos
1# soft cream cheese
1# shredded smoked Gouda
8 strips crispy bacon or 1/4 c bacon bits
10 pitted calamata olives
2 minced shallots
3 cloves minced garlic
Preparation
Slice jalapenos lengthwise thru the stem and w/ a tsp clean out seeds and vein. Failure to clean properly, will cause more heat and the inability to enjoy the stuffing
Line face up on a baking sheet and bake at 300 for 30 minutes. Shell should be soft
In a food processor combine remaining ingredients and use short quick pulses to combine
Once jalapeno halves have cooled, stuff with approx 1 tsp of mixture
Wrap w/ film and chill for at least 1 hr.
Bake @ 350 for 20 min or until golden crust forms on each one
