Ingredients

10 firm but ripe peaches, preferably freestone

20 amaretti (bitter-almond-flavored biscuits), crumbled

20 ounces semisweet chocolate, broken into small chunks

1/2 cup white wine

Sugar for sprinkling

Preparation

Heat oven to 350 degrees. Cut a hole in tops of peaches and scoop out pits, being careful not to tear the edges.

In a small bowl, combine amaretti and chocolate pieces. Stuff each peach with some of the mixture, being careful to pack down gently.

Place peaches a few inches apart in a baking dish. Pour wine into dish and sprinkle peaches with sugar.

Bake until peaches are soft, 15 to 25 minutes, depending on ripeness. Serve warm with the syrup that forms at the bottom of the pan.
