Ingredients

3-4 small sweet potatoes (the orange ones), peeled and finely chopped

1 large or 2 medium mangoes, peeled and cut into large pieces

1/2 a stick of butter, melted

1/2 cup of real maple syrup

squeeze of a 1/4 lemon

1/2 tsp sea salt

1/2 tsp fresh ground pepper

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger

Preparation

Preheat oven to 400F

Arrange potatoes in a glass dish according to the amount, leaving room to add mangoes later. Toss together with the rest of the ingredients. Cover and bake for 15 minutes. Uncover and stir - leave uncovered from here on out. Stir every 15 minutes for the next 1/2 hour. Stir in the mangoes and bake, stirring every 15 minutes for the next 1/2 hour. Let cool at least 15 minutes before serving.
