Ingredients
1/2 cup panko bread crumbs
1/2 cup grated Parmesan
2 tablespoons olive oil
1 tablespoon dried oregano; season with salt and peper. 1.5 pounds of thickly sliced beefsteak tomatoes
Preparation
In a small bowl, toss together 1/2 cup panko bread crumbs, 1/2 cup grated Parmesan, 2 tablespoons olive oil and 1 tablespoon dried oregano; season with salt and peper. Place 1.5 pounds of thickly sliced beefsteak tomatoes in a baking dish, overlapping slightly. Spring with the panko mixture and bake at 350 until golden brown (20-25 minutes)
