Ingredients
2 15 ounce cans chickpeas
3/4 cup diced tomatoes
1/2 onion, chopped
1/4 cup minced fresh mint
1/4 cup minced fresh parsley
1/4 cup extra virgin olive oil
1/2 cup cider vinegar
1 clove garlic, minced
salt and pepper to taste
Preparation
Drain liquid from chickpeas and pour into a bowl, then mix gently the rest of the ingredients together.
