Ingredients
Equal parts balsamic vinegar and olive oil, enough marinade to cover steak
1 lb. flank steak
2 cloves minced garlic
2 cups baby arugula
2 cups assorted cherry tomatoes
1 loaf of rustic bread, sliced
Some good olive oil for bread
Parmigiano-reggiano cheese, shaved
Preparation
- Mix garlic with balsamic and olive oil. Cover steak and marinade at least 15 minutes.
- Heat grill for steak and broiler for bread. 3)Brush bread with good olive oil and halve cherry tomatoes.
- Pat off excess marinade on the meat with a paper towel. Salt and pepper the meat. Grill the steak medium rare.
- Toast the bread. Place 2 slices on each plate. Top with steak, then arugula. Put cheese on top and scatter tomatoes. Drizzle oil over top, salt and pepper.
