Ingredients

1 and 1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

1 tsp olive oil

1 lb chicken breast

2 tbsp balsamic vinegar

2 tbsp honey

Preparation

  1. Combine first 3 ingredients and sprinkle over both sides of chicken.
  2. Heat oil in large non-stick skillet over medium-high heat. Add chicken and cook 7-8 minutes on each side or until chicken is done.
  3. Transfer chicken to a platter and keep warm. Reduce heat to medium-low and add honey and vinegar to pan. Simmer 1 minute or until glaze thickens; stir constantly. Pour glaze over chicken.

Serve over a bed of brown rice and a side of greens
