Ingredients

Yiao Fan (Fried sticky rice):

1/2 C oil

1/4 C shallots

3/4 t salt

1 1/2 T soy sauce

1/4 t white pepper

3 C sweet rice (sticky rice?)

1/4 C dried shrimp (optional, can put in filling)

Filling:

8 oz pork shoulder or shank (1" chunks)

3 dried black mushrooms (quartered)

8T soy sauce

1/4 t MSG (sub. sugar is fine)

1/4 t sugar

1/2 t cooking wine (white)

1/4 C shallots

Wrapping:

20 dried bamboo leaves

20 strings

Preparation

For yiao fan (sticky fried rice): Fry shallots until brown and remove from pan.

Put oil in pan and re-add shallots.

Add salt, soy sauce, and white pepper.

Add rice (can be precooked to speed up process).

Mix until brown.

Add peanuts and shrimp and stir well.

For filling:

Fry shallots until brown

Add shrimp

Brown meat

Add mushrooms

Add all sauces

Alternative method: marinate all ingredients in sauces before cooking

To wrap:

Soak and clean bamboo leaves.

Wrap filling in rice and then bamboo leaves. Steam for 30 minutes.
