Ingredients
3 cups all-purpose flour, plus a few tablespoons for coating blueberries
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp finely grated lemon zest
3/4 cups unsalted butter, softened
2 1/2 cups ripe mashed bananas (4-5)
2 large eggs, room temp
1/4 cup apple juice
2 cups blueberries
Preparation
grease 2 muffin tins. combine flour, baking powder, baking soda, salt, and lemon zest. set aside. in another bowl, cream butter and brown sugar on med speed, about 3 minutes, until fluffy. mix in bananas, eggs, and apple juice. remove the bowl and mix in flour (by hand)until just moistened. toss blueberries with 2 TBS of flour until coated. discard excess flour. gently fold coated blueberries into batter. spoon batter into prepared tines, filling each cup 3/4 full. bake for 18-22 minutes
