ripe bananas, mashed

cups quick-cooking or old-fashioned oats

cup packed light brown sugar

teaspoon baking powder

teaspoon ground cinnamon

Pinch of salt

Preparation

Heat oven to 375°F. Line 8-inch square (2-quart) baking dish with cooking parchment paper.

In medium bowl, beat 2 ripe bananas, mashed, 1 egg and 1 cup milk with whisk until smooth. Add 1 1/2 cups quick-cooking or old-fashioned oats, 1/4 cup packed light brown sugar, 1 teaspoon baking powder, 1 teaspoon ground cinnamon and a pinch of salt; mix until evenly combined. Pour into baking dish.

Bake about 30 minutes or until set.
