Ingredients
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup butter, at room temp
4-5 very ripe bananas, mashed
2 cups flour
1 cup nuts
1 cup chocolate chips
1 Tbls. baking powder
1/4 cup milk or half+half, mixed w/ 1 tsp. apple cider vinegar
1 tsp. vanilla
1 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. salt
Preparation
Preheat oven to 350 F. Spay loaf pan or muffin tins w/ non-stick cooking spray.
Sift together flour, baking powder, salt, and spices.
Cream together the margarine & sugars. Add bananas, soy milk, and vanilla.
Add wet ingredients to dry ingredients. Mix well. Add nuts and carob/chocolate chips. Mix.
Pour batter into loaf pan or muffins tins/cups.
Bake loaf for 1 hour to 1 hour, 10 minutes. Bake muffins for approx. 30 minutes
