Ingredients
1/3 cup margarine or Smart Balance
4 ripe bananas
3/4 cup brown sugar (if using Splenda Brown sugar, remember to cut that amount in 1/2)
1 egg
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
3/4 cup whole wheat flour
3/4 cup white flour
1/2 cup bran or flaxseed
1 cup raisins
Preparation
Mix all ingredients in a bowl until batter is smooth. Pour into a non-stick 4.5" x 8.5" loaf pan. Bake at 350 for 1 hour or until tooth pick comes out clean.
*If you prefer to make muffins, be sure to only mix by hand. Bake at 350 for approximately 20 minutes.
