Ingredients
1/3 cup vegetable oil
1-1/2 cups mashed ripe bananas (about 3 large) - the blacker the better!
1/2 tsp vanilla
3 eggs
2-1/3 cups Bisquick baking mix
1 cup sugar
1/2 cup chopped nuts or dried blueberries, cranberries or cherries or any combination
Preparation
Heat oven to 350 degrees. Generously grease bottom of loaf pan 9x5x3" (or 3 small aluminum pans for gift giving) Stir all ingredients in pan with fork until moisetened; beat vigorously 1 minute.
Bake until wooden pick inserted in center comes out clean out 55-65 mins. Cool 5 mins. Run knife around sides of loaf to loosen; remove from pan.
