Ingredients
1/2 c butter (softened)
3/4 c light brown sugar
3/4 c granulated sugar
1 tsp vanilla
1 egg yolk and 1 egg
1 c mashed ripe bananas
1 tsp baking powder
1/2 tsp baking soda and salt
3/4 cup buttermilk
2 c flour
Preparation
Cream butter. gradually add sugars and beat until fluffy. Add vanilla and eggs and beat well. Blend in banana then add mixed dry ingredients alternating w/buttermilk, beating after each addition until smooth. Pour into well greased bread pan. Bake in oven (325 F) for 1 hour or until done (check with toothpick). Cool in pan on rack for 20 min and then turn out.
If you don’t have buttermilk, you can combine the baking soda and milt to sour it.
