Ingredients
2 cups flour (I used spelt)
1/4 cup sugar
1/2 cup xylitol (You can use all sugar)
3/4 tsp. baking soda
1/2 tsp. salt
3 very ripe bananas mashed
1/4 cup plain yogurt or kefir (or a teaspoon of lemon juice in milk)
3 T. melted butter or coconut oil
1 tsp. vanilla
Preparation
Preheat oven to 350. Grease and flour only bottom of pan (Why?) (I go up the sides a little ways, too.) Combine dry ingredients and set aside. Combine wet ingredients. Lightly fold wet into dry ingredients. Scrape batter into loaf pan. Bake about 55 minutes, or until toothpick inserted comes out clean.
