Ingredients
1/3 cup shortening
1 1/2 cup sugar
2 eggs
1 3/4 cup flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 1/2 cup (approx 4 medium) very ripe bananas - mashed
Preparation
Preheat oven to 350 degrees Cream shortening and sugar together. Beat in eggs until light and fluffy. Stir together dry ingredients. Add to creamed mixture alternately with banana until batter is smooth. Pour batter into a greased loaf pan. Bake for 1 hour Cool completely before removing from pan. Freezes well.
