Ingredients

3-4 very ripe bananas, smashed

1/2 cup melted butter

3/4 cup sugar

1 egg, beaten

1 tsp each: vanilla + baking soda

pinch salt

1 1/2 cups all purpose flour

1/2-1 cup chopped walnuts (optional)

Preparation

Preheat oven to 350* Mix butter into smashed bananas with a wooden spoon. If adding chopped walnuts do so now. In a separate bowl combine sugar, egg, and vanilla. Mix into banana+butter. Sprinkle baking soda and salt over mix + fold in. Add flour last, mix together but do not over mix.

If using a bread pan bake for 1 hour. Let cool before removing from pan.

Can be made into muffins, bake for 25-30 minutes.
