Ingredients

2 Eggs beaten

3 Lg Ripe Bananas mashed

1 C Sugar

2 C Flour

1 t Baking Soda

½ C Vegetable Oil

1 C Nuts chopped (Pecans or Walnuts)

2 t Vanilla

Preparation

Slowly add sugar to well beaten eggs stirring as you pour. Mix the bananas in well. Sift flour, salt and soda in the mixture. Add the oil and blend well. Mix in the nuts and the vanilla. Pour the batter into a well greased 9 inch loaf pan and bake at 350 degrees approximately 45-60 minutes or until a toothpick comes out of the center clean.
