Ingredients
1/3 cup margarine
1/2 cup sugar
2 tsp apricot jelly
2eggs
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup buttermilk
1 cup mashed ripe bananas
1/2 cup chopped walnuts
Preparation
- Preheat oven to 350F. Grease a 9x5x3" loaf pan and set aside.
- In a large bowl, cream margarine and sugar thoroughly. Beat in apricot jelly and two eggs until mixture is light.
- In another bowl, sift together flour, baking powder, baking soda, and salt. Stir dry ingredients into the creamed ingredients alternately with buttermilk.
- Stir in mashed bananas and walnuts.
- Pour into the prepared pan. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.
- Remove from pan and cool on rack. Slice to serve.
