Ingredients

Ingredients:

¼ C vegetable oil or melted butter

2/3 C. sugar (you can use white or brown)

1 egg

3 large mashed over-ripe bananas

1 t. baking powder

1 t. baking soda

¾ t. salt

2 C. flour (I like half white and half whole wheat)

Optional (choose one):

¾ C. nuts (I like walnuts or pecans, but sliced almonds are good too)

¾ C. strawberries or mixed berries (either fresh or thawed from frozen)

¾ C. semi-sweet chocolate chips

Preparation

Mix all ingredients in a large bowl until you don’t see any more flour. Pour into greased and floured pans (2 small or 1 large). Sprinkle a few nuts over the top if you like. Bake at 350 degrees for 45 minutes for small pans, 1 hour for large pans.
