Ingredients
3 bananas - over-ripe is best
1/4 cup oil
1/2 stick butter
1 cup sugar
2 eggs
1 1/2 cup flour
1 tsp baking soda
1 1/4 tsp cinnamon
3/4 tsp cloves
1/4 tsp salt
Preparation
Mash bananas and pour oil over them - set aside.
Cream butter and sugar and then beat in eggs. Combine dry ingredients and sift into butter mixture. Add banana mixture and stir until the entire batter is well-blended (there will be small lumps of banana).
Pour into grease 9x5 loaf pan (or muffin tin). Bake at 250 degrees F for 1 1/2 hours or until a toothpick comes out clean
