Ingredients
Dry ingredients:
4 c. flour
4 t. baking powder
1 t. baking soda
1 t. nutmeg
1 t. cinnamon
1 t. salt
Other ingredients:
1/2 c. light olive oil
1 c. brown sugar or 1/2 c. Splenda brown sugar blend
4 eggs
4 mashed bananas
1 c. fat-free sour cream
Preparation
Preheat the oven to 350 degrees. Spray 2 bread pans with cooking spray. Mix the dry ingredients together in one bowl. Beat the oil and sugar/Splenda together in another, larger bowl. Add the eggs and beat. Then add the bananas and sour cream and mix. Add the dry ingredients to the banana mixture a little at a time, while stirring. Pour into 2 bread pans. Bake approximately 45 minutes, or until a toothpick comes out clean.
