Ingredients:

½ cup tamarind pulp

2 tbsp ground fresh ginger

½ cup raisins

1 green mango, peeled and chopped

3 bananas, peeled and cut into half inch slices

1 yellow onion, chopped

1 granny smith apple, chopped

1 tsp ground cumin

1 tsp ground coriander

1 cup cider vinegar

1 cup brown sugar

½ cup chopped whole tomatoes (fresh or canned)

Preparation

Instructions: Add all ingredients in a heavy saucepan and simmer gently, stirring often, for about 40 minutes or until thick and syrupy. Keeps indefinitely in refrigerator.
