Ingredients

1 cup toasted oat bran

1 cup spelt or white flour

1 tsp baking soda

1/3 cup brown sugar + 1 dropper full of liquid stevia (or 1 cup brown sugar, no stevia)

3/4 tsp baking powder

1/2 tsp salt

1 tsp each vanilla extract & almond extract

1 handful unsweetened coconut flakes

2 eggs, lightly beaten

1/3 cup canola oil (or 1 stick melted unsalted butter)

1/2 cup apple sauce (+ 1 cup more if skipping bananas)

1 1/2 medium mashed bananas

1 cup chopped toasted almonds

Preparation

preheat over to 350

mix wet ingredients and dry ingredients (except for nuts) separately and then combine - do not over stir.

pour batter into a loaf pan lined with wax or parchment paper and sprinkle almonds on top.

Bake for 50 minutes.
