Ingredients
Topping:
½ cup sugar
2 tbsp oil
2 tsp ground cinnamon
2 tbsp flour
Cake:
¾ cup sugar
¼ cup vegan margarine, room temperature
1 banana
½ cup non-dairy “milk” (soy, almond, rice, coconut, ect.)
1 ¼ cup flour
2 tsp baking powder
½ tsp salt
Preparation
Preheat oven to 325 degrees. Lightly oil a pan and set aside. In a small bowl, stir together the topping ingredients and set aside. In a bigger bowl, cream together the margarine and sugar. Add the banana, milk, flour, baking powder and salt. Stir together until “just mixed.” Spoon the batter into pan, then sprinkle evenly with topping. Bake for 30-35 minutes or until a knife comes out clean. Let cool, then enjoy!
