Ingredients
3 ripe bananas
1/4 cup molasses
1/4 cup honey
3 Tbls coconut oil
1 Tbls fresh grated ginger
1 tsp vanilla extract
1 1/2 cup spelt flour
1/4 tsp. salt
1 1/2 tsp. baking soda
1 cup chopped walnuts
Preparation
Heat oven to 350 degrees.
In a medium bowl, mash and fluff ripe bananas. Stir in coconut oil (if oil is in solid state, warm it slightly first for easier mixing), molasses, honey, ginger and vanilla.
Once your wet mixture takes on a dark marble color, (approximately 5 minutes stirring) add flour, salt, baking soda. Mix completely. Add walnuts.
Spoon the mixture into an oiled bread pan.
Bake for 40-45 minutes.
