Ingredients
1/2 c granulated sugar
2 T brown sugar
5 T margarine
1-1/3 cups mashed bananas (2 medium)
1 egg
2 egg whites
1-1/2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/3 c walnuts
Preparation
Preheat oven to 375 degrees F. Spray large loaf pan with nonstick cooking spray; set aside. Beat sugars and margarine in large bowl with electric mixer until light an dfluffy. Add bananas, egg and egg whites. Sift together flour, baking soda and salt in medium bowl; add to banana mixture. Stir in walnuts. Pour into prepared loaf pan. Bake 1 hour or until wooden pick inserted into center comes out clean. Remove from pan. Cool on wire rack 10 minutes. Serve warm, or cool completely.
