Ingredients
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
2 eggs, lightly beaten
3/4 cup oil
3 tablespoons buttermilk
2-3 bananas mashed (about 1 cup)
1 cup chopped pecans
Preparation
Preheat oven to 325 degrees. Grease and flour 1 loaf pan: set aside. Sift together flour, baking soda and salt. Add sugar, eggs, oil and buttermilk; stir to blend. Fold in bananas and nuts. Pour into prepared dish. Bake 1 hour and 10 minutes, or until toothpick inserted in center comes out clean. Let cool in pan 15 minutes. Turn out onto wire rack to cool.
