Ingredients
8 T butter, softened
1 cup sugar
2 large eggs
3 ripe bananas
1 T milk
1 cup walnuts,coarsely chopped
2 cups all-purpose flour
1 t salt
1 t baking soda
1 t baking powder
Preparation
- Cream butter and sugar until light and fluffy. Add egss, one at a time, beating well after each.
- In a small bowl, mash bananas with a fork. Mix in milk and nuts.
- In another bowl, mix together flour, salt, baking soda and baking powder.
- Add banana mixture to creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
- Pour batter into a buttered 9x5x3" loaf pan and bake in a 325-degree preheated oven for 1 hour 10 minutes, or until a toothpick inserted in center comes out clean. Set aside to cool on rack in pan for 15 minutes. Remove from pan, invert and cool completely.
