Ingredients

3 TBs EVOO

4 bananas, cut in 1" slices

2 TBS chopped onion

1 cup long grain brown rice

1 egg, beaten

2 1/2 cup stock

1 tsp curry

1/4 cup Parmesan cheese

Preparation

Heat oil, cook bananas and onion for 3 minutes and set aside. Combine rice, egg and stir until all rice kernals are dry and separate. Add stock, curry powder and bring to boil. Add banana-onion mixture and cover tightly and cook in 350 oven for 45 minutes. Fluff and sprinkle with cheese.
