Ingredients
3 1/2 tablespoons of all purpose flour
1 1/13 cup of sugar
Dash of salt
3 egg yolks
3 cups of milk (total)
Vanilla Bean
1 tbl banana liquor
12 Vanilla wafers
6 medium bananas
Preparation
Combine vanilla bean and 1 cup of milk. Scald and let cool. Scrape vanilla bean seeds into milk and then strain. Combine flour, 1 1/3 cups of sugar and salt in heavy saucepan. Beat egg yolks; combine egg yolks and all the milk (including vanilla bean milk),mix well. Stir in dry ingredients; cook over medium heat; stirring constantly until smooth and thickened. Remove from heat.
Layer 1/3 of wafers in a 3 quart baking dish. Slice 2 bananas and layer over wafter. Pour 1/3 of custard. Repeat layers twice.
