cup raisins, if desired

cup bran flakes cereal, finely crushed

tablespoon margarine or butter, melted

Preparation

Heat oven to 350°F. Spray 9-inch round cake pan with nonstick cooking spray. In medium bowl, combine milk, egg product and oil; beat until well blended. Stir in 1 1/2 cups cereal and banana until well mixed. Set aside.

In large bowl, combine flour, 1/4 cup brown sugar, baking powder, cinnamon, baking soda and salt; mix well. Stir in raisins. Add banana mixture; stir just until dry ingredients are moistened. Spoon and spread batter evenly in sprayed pan.

In small bowl, combine all topping ingredients; mix well. Sprinkle over batter.

Bake at 350°F. for 25 to 35 minutes or until cake springs back when touched lightly in center. Cool 10 minutes. Serve warm.
