Ingredients
Serves 2:
1 cup flour
1 and 1/4 cup milk
1/4 tsp. baking powder
1 egg
1 tsp. vanilla
1 tbsp. sugar
1 tsp. cinnamon
1 tsp. nutmeg or all spice
2 1/2 rip bananas
1 and 1/2 cup brown sugar
5 tbsp. butter, unsalted
whipped cream and powdered sugar - optional
Preparation
To make crepes: Whisk first 8 ingredients together in medium size bowl. Heat 10-in. pan over med-high heat. Spray with Pam. Once pan is hot, pour 1/4 cup of batter into pan and spread batter around entire pan lifting from the heat and using the handle. Return to heat. When crepe lifts from sides of pan, it is time to flip it (about 1-2 min.) Make sure edges are free to move and flip crepe using thin metal spatula with the help of your hand. Let heat for 1-2 more min. and remove from pan. Make the remainder of crepes spraying with Pam each time you pour more batter.
To make banana syrup: Heat small saucepan over med-low heat and place butter in pan along with brown sugar. Let the butter and brown sugar heat until a soft boil. Then remove from heat and add bananas.
To assemble: Once all crepes are made, spread a few bananas onto the middle of your crepe. fold up bottom half of crepe, then fold in sides, then fold over placing “seam” side down onto plate. Continue with the remaining crepes and then spread remainder of bananas and syrup over finished crepes. Serve with a sprinkle of cinnamon, powdered sugar and whipped cream!
