Ingredients
****FRENCH TOAST:
3 eggs
3/4 cup milk
1 grated orange, (zest)
1/4 cup orange juice (squeeze from orange)
1/4 teaspoon vanilla or almond extract
1/3 cup to 2/3 cup pancake mix with pudding mix
2 Tablespoons of sugar
1/4 teaspoon cinnamon
8 slices of french bread or texas toast
Cooking spray
1-2 bananas, peeled and sliced
powdered sugar for dusting
****SYRUP
1 Tablespoon butter
1 Tablespoon chopped pecan
1 cup maple syrup
1/2 teaspoon of rum extract
Preparation
****FRENCH TOAST
- In a mixing bowl, whisk the eggs, milk, and orange zest, orange juice, sugar, pancake mix, cinnamon and vanilla. (Mix the cinnamon, pancake mix and sugar together first)
- Mix until the sugar is dissolved.
- On a non-stick frying pan, spray with cooking spray
- Dip 2 slices of bread into the egg-milk mixture, coating evenly.
- Fry in the butter until golden brown, 2-3 minutes each side.
- Repeat til all bread is used.
- Lay the french toast on a plater
- Add the bananas to the toast
- Spoon the warm sauce over the toast
- Dust with powdered sugar and cool whip if desired.
****SYRUP In a medium sauce pan, melt 1 Tablespoon of butter. Add the pecans and sauté for 4-5 minutes, stirring constantly Stir in the maple syrup and bring the liquid to a simmer. Remove the pan from the stove and add the rum extract.
