Ingredients

2 Cups White Whole Wheat Flour

2 Teaspoons Baking Powder

1/4 Teaspoon Baking Soda

Pinch Salt

1/4 Teaspoon Nutmeg

1/2 Teaspoon Cinnamon

1 Cup Chopped Walnuts

1/2 Cup Golden Raisins

3/4 Cup Light Brown Sugar

2 Large Eggs (or egg substitute)

1 cup of mashed Ripe Banana (2 medium sized Bananas)

1/1 Cup Lemon Yogurt

1 Tsp Vanilla

Preparation

Preheat oven to 325 degrees.

In a Medium bowl whisk to combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Set aside

In a large mixing bowl mix over low speed eggs and sugar until frothy. Add mashed bananas, yogurt, and vanilla. Mix to combine. In three equal additions add the dry mix to the wet mix, mixing until just combined. Add Walnuts and Raisins and stir with wooden spoon to combine and spread through batter.

Fill muffin cups with batter 3/4 full. Bake for 20-28 minuets at 325 Degrees.
