Ingredients
1 tbsp olive oil
1 1/2 tbsp unsalted butter
1/4 cup chopped scallions
1 tbsp dried shrimp that has been rinsed in warm water and chopped finely(optional)
1 red Thai chile, chopped
2 cups fresh corn(cut off the cob)
1 tbsp fish sauce
1 pinch of salt
Preparation
- Heat oil and melt butter in a skillet over high heat.
- Add shrimp(optional), scallions, and Thai chile. Cook mixture until scallions are wilted (about 20-30 sec).
- Remove mixture from skillet and set aside leaving behind the oil.
- Add the corn, salt, and fish sauce to the skillet.
- Cook the corn, stirring frequently, until done.
- Add back the scallion mixture and give it a few good stirs.
- At this point taste it and see if its salted to your taste. If necessary add additional fish sauce until desired level of saltiness is achieved.
- Remove from heat and place in serving bowl.
