Ingredients

1 tbsp olive oil

1 1/2 tbsp unsalted butter

1/4 cup chopped scallions

1 tbsp dried shrimp that has been rinsed in warm water and chopped finely(optional)

1 red Thai chile, chopped

2 cups fresh corn(cut off the cob)

1 tbsp fish sauce

1 pinch of salt

Preparation

  1. Heat oil and melt butter in a skillet over high heat.
  2. Add shrimp(optional), scallions, and Thai chile. Cook mixture until scallions are wilted (about 20-30 sec).
  3. Remove mixture from skillet and set aside leaving behind the oil.
  4. Add the corn, salt, and fish sauce to the skillet.
  5. Cook the corn, stirring frequently, until done.
  6. Add back the scallion mixture and give it a few good stirs.
  7. At this point taste it and see if its salted to your taste. If necessary add additional fish sauce until desired level of saltiness is achieved.
  8. Remove from heat and place in serving bowl.
