Ingredients

4 filet of tilapia (can be substituted with mild fish of choice)

1 can quartered artichoke hearts

1 can hearts of palm

3-4 ripe tomatoes

2 tbsp capers

1-2 tbsp olive oil

2 garlic cloves minced

fresh basil

1/4 cup white wine

salt & Pepper

large baking dish

Preparation

Preheat oven to 375 degrees. Chop tomatoes, hearts of palm, and basil. In large bowl combine all above with artichoke hearts, white wine, olive oil, capers.

Lighlty coat pan with olive oil. Lay fish flat in pan cover with vegetable mixture. Season with salt and pepper to taste. Bake for 20-25 minutes (approx. depending on thickness of fish)
