Ingredients

Brine

4 oz. liquid smoke

1 1/2 cups kosher salt

3/4 cup brown sugar

Rub

1 tbsp. kosher salt

2 tbsp. pepper

1/4 cup sugar

2 tbsp. chili powder

2 tbsp. cumin

1/4 cup paprika

Preparation

Brine

  1. Combine brine ingredients with 1 gallon water.
  2. Stir to dissolve salt and sugar.
  3. Add meat, cover tightly, refrigerate 24 hours.

Cooking

  1. Remove meat from brine, dry with paper towels.
  2. Rub all over with mix.
  3. Cook at 225 in oven until tender (all afternoon?)
