Ingredients
Brine
4 oz. liquid smoke
1 1/2 cups kosher salt
3/4 cup brown sugar
Rub
1 tbsp. kosher salt
2 tbsp. pepper
1/4 cup sugar
2 tbsp. chili powder
2 tbsp. cumin
1/4 cup paprika
Preparation
Brine
- Combine brine ingredients with 1 gallon water.
- Stir to dissolve salt and sugar.
- Add meat, cover tightly, refrigerate 24 hours.
Cooking
- Remove meat from brine, dry with paper towels.
- Rub all over with mix.
- Cook at 225 in oven until tender (all afternoon?)
