Ingredients

3 cups water

1 cup pearl barley, uncooked

1 tablespoon minced jalapeno peper

1/4 cup fresh lime juice

2 tablespoons vegetable oil

1/2 teaspoon salt

1/8 teaspoon pepper

1 cup corn

1/2 cup peeled, seeded and diced cucumber

1/2 cup diced unpeeled tomato, remove pulp

1/2 cup diced green bell pepper

1/2 cup finely chopped purple onion

Preparation

  • Bring water to a boil in a medium sauce pan; gradually stir in barley. Cover, reduce heat and simmer 40 minutes or until barley is tender and water is absorbed. Let cool.
  • Combine jalapeno pepper and next 4 ingredients and stir with a wire whisk. Combine barley, corn and next 4 ingredients in a large bowl; add dressing, tossing to coat.
